Serves 10 people
To make the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Syrup: Place all the components into a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. After that, turn off the burner and leave to cool entirely. Transfer into a sealable bottle, seal and store in the fridge, it can be stored for around a month.
Preparing the Premix: Pour the specified spirits and syrup into one big jug, let it rest for 60 minutes, then pass it through preferably using muslin, making it fully clarified.
When ready to serve: Measure 85ml from the batch mix into your stirring glass filled with ice, and stir carefully for about 60 seconds until cold. Filter to a chilled martini glass or similar, garnish with a few cranberries and finish by giving it a light spray of the essential oil above the glass.
